
Kick up your tomato sauce with this delicious, healthy recipe from Ste. Anne’s Spa, which recently opened a bakery specializing in gluten-free options and serves gluten-free products daily at the Inn.
Serve sauce with grilled vegetables, fish or chicken. You can even pair it with gluten-free pasta.
Creole Sauce
Yield: 6-8 portions
Ingredients
1 tbsp olive oil
1 small onion – cubed
1 large carrot – sliced on the bias
1 stick celery – sliced on the bias
1 small green pepper seeded & sliced
2 cloves fresh garlic – minced
1/2 tsp italian dried herbs
pinch cayenne powder
1/4 tsp kosher salt
1/2 19oz tomato paste
1 – 28oz tomato juice
2 – 28oz cans diced tomato
(You can also add mushrooms)
Method
Heat a heavy bottomed pot at medium high. Add olive oil and toss in the onions, let simmer one minute. Add carrots and celery and let simmer for one minute. Toss in green peppers and garlic and let simmer for one minute.

Next add dried herbs. Add cayenne, salt and tomato paste. Stir well then still stirring pour in the tomato juice.
Gently place the diced tomatoes. Bring to a boil then turn down and let simmer in the pot for 20 minutes.
